Ingredients:
-Ghee (Clarified butter) 2 tbs
-Cooking oil 2 tbs
-Adrak lehsan paste (Ginger garlic paste) 1 tbs
-Mutton mix boti 500g
-Kali mirch (Black pepper) crushed 1 & ½ tsp
-Himalayan pink salt 1 & ½ tsp or to taste
-Pyaz (Onion) finely chopped 1 large
-Dahi (Yogurt) whisked ¼ Cup
-Lal mirch powder (Red chilli powder) ½ tsp or to taste
-Chicken powder ½ tsp
-Dhania powder (Coriander powder) ½ tsp
-Haldi powder (Turmeric powder) ¼ tsp
-Kashmiri lal mirch (Kashmiri red chilli) powder 1 tsp
-Zeera powder (Cumin powder) ½ tsp
-Water 3 Cups or as required
-Sabut lal mirch (Button red chillies) 2-3
-Javitri (Mace) 1-inch piece
-Badiyan ka phool (Star anise) 1
-Badi elaichi (Black cardamom) 1
-Jaifal (Nutmeg) 1 piece
-Zeera (Cumin seeds) ½ tsp
-Garam masala powder 1 tsp
-Water 3 tbs
-Maida (All-purpose flour) 1 tbs
-Sabut lal mirch (Button red chilles) 3-4
-Hara dhania (Fresh coriander) chopped
-Adrak (Ginger) julienne
Directions:
-In a clay pot,add clarified butter,cooking oil & let it melt.
-Add ginger garlic paste & mix well.
-Add mutton & mix well until it changes color.
-Add black pepper crushed,pink salt & mix well.
-Add onion,mix well & cook on medium flame for 2-3 minutes.
-Add yogurt,red chilli powder,chicken powder,coriander powder,turmeric powder,kashmiri red chilli powder,cumin powder,mix well & cook on medium flame until oil separates (4-5 minutes).
-Add water & mix well,bring it to boil,cover & cook on low flame until meat is completely tender (1-2 hours).
-In a tadka pan,add red button red chillies,mace,star anise,black cardamom,nutmeg,cumin seeds & dry roast on low flame until fragrant.
-Turn off the flame,add garam masala powder & mix well.
-Let it cool.
-In mortar & pestle,add roasted spice & crush well.Angaari spice mix is ready!
-Add prepared angari spice mix & mix well (reserve half for later use).
-In a bowl,add water,all-purpose flour & whisk well.
-Add in clay pot,mix well & cook on medium flame for 1-2 minutes.
-Add button red chillies,mix well & cook on medium flame until it thickens (2-3 minutes).
-Sprinkle reserved angaari spice mix,fresh coriander,ginger & serve with naan!

-Ginger garlic paste dal kar achi tarah mix karen.
-Mutton dal kar mix karen jab tak color change ho jaye.
-Black pepper crushed,pink salt dal kar mix karen.
-Onion dal kar mix karen aur medium flame par 2-3 minutes cook karen.
-Yogurt,red chilli powder,chicken powder,coriander powder,turmeric powder,kashmiri red chilli powder,cumin powder dal kar mix karen aur medium flame par cook karen jab tak oil separate ho jaye (4-5 minutes).
-Pani dal kar mix karen,boil aane dein,cover kar ke low flame par cook karen jab tak meat tender ho jaye (1-2 hours).
-Tadka pan mein button red chillies,mace,star anise,black cardamom,nutmeg,cumin seeds dal kar low flame par dry roast karen jab tak fragrant ho jaye.
-Flame off kar ke garam masala powder dal kar mix karen.
-Thanda hone dein aur mortar & pestle mein dal kar crush karen.Angari spice mix ready hai!
-Clay pot mein prepared angaari spice mix dal kar mix karen (aadha reserve kar lein baad ke liye).
-Ek bowl mein pani,all-purpose flour dal kar whisk karen.
-Ise clay pot mein dal kar mix karen aur medium flame par 1-2 minutes cook karen.
-Button red chillies dal kar medium flame par 2-3 minutes cook karen jab tak thicken ho jaye.
-Reserved angaari spice mix,fresh coriander,ginger sprinkle karen aur naan ke saath serve karen.
